Ingredients:

3 cups all-purpose flour
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup brown sugar
1 large egg
1/2 cup unsulphured molasses
1 teaspoon pure vanilla extract
Instructions:

**In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.

**In a large bowl, cream the softened butter and brown sugar together until light and fluffy. This can take about 3-5 minutes.

**Beat in the egg, followed by the molasses and vanilla extract.

**Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together.

**Divide the dough in half and shape each half into a thick disk. Wrap in plastic wrap and refrigerate for at least 1 hour or until firm.

**Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

**Roll out one portion of the dough to about 1/4 inch thickness on a lightly floured surface.

**Use cookie cutters to cut out shapes and transfer them to the prepared baking sheets, leaving some space between each cookie.

**Bake for 8-10 minutes or until the edges are set but the centers are slightly soft.

**Let the cookies cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.

**Once the cookies are completely cooled, you can decorate them with royal icing, sprinkles, or leave them plain.

Royal Icing (for Decorating):

1 egg white
1 1/2 cups powdered sugar
1/2 teaspoon lemon juice


Instructions:

In a bowl, beat the egg white until foamy.
Gradually add the powdered sugar and lemon juice and beat until the icing is smooth and thick.
If it's too thick, add a few drops of water to reach the desired consistency.
