For the Royal Icing (Optional):

  • 2 cups powdered sugar
  • 1 1/2 tablespoons meringue powder
  • 1/4 cup warm water
  • Food coloring (optional)

Instructions:

For the Cookies:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes.
  4. Beat in the egg and the vanilla extract. Add the almond extract if you're using it.
  5. Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together. If the dough is too dry, you can add buttermilk or milk a tablespoon at a time until the right consistency is reached.
