(Serves 4)

   2 Yolks

   2 Eggs whites

   125 g Sugar

   450 g Mascarpone

   10 Ladyfinger cookies (about three packs)

  1 cups espresso

   ~1/8 cup Coco powder to dust

 Instructions:

  1. Separate the egg yolk from the egg white using the 3-bowl method. Important to know that no yolk should be present in your egg white mix.
  2. Divide the sugar into two equal parts. Add half of sugar to the coffee in a bowl and half to egg yolk.
  3. Start mixing egg white with kitchenaid until it peaks. When done, set aside.
  4. In a bowl, take the egg yolk with sugar, and whisk together until it lightens in color and the mixture has fluffed up.
  5. Combine the mascarpone with the yolk and mix until combined.
  6.  With a spatula, gently incorporate the egg white mix into the egg yolk/mascarpone mix.
  7. Prepare your coffee with sugar.
  8. In a bowl, add layer of mascarpone, Dip the ladyfingers in coffee and place them in your ramekin or casserole platter. Place the mascarpone and egg compost to cover the lady's fingers. Add a second layer of the lady's fingers and cover again with the compost. Once done, cover with cocoa powder and set in the fridge for at least 30 min! Keep over night in the fridge for the best result.
