Ingredients:
For the Wontons:
- 1/2 pound (225g) ground pork
- 1/4 pound (115g) peeled and deveined shrimp, finely chopped
- 2 tablespoons finely chopped green onions (scallions)
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon grated ginger
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground white pepper
- 25-30 wonton wrappers
For the Soup:
- 6 cups chicken broth
- 2 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt, to taste
For the Noodles and Toppings:
- Fresh egg noodles or thin wonton noodles
- Bok choy or baby bok choy, blanched
- Chopped green onions (scallions)
- Thinly sliced red chili pepper (optional)
- Cilantro leaves for garnish (optional)
Instructions:
- In a mixing bowl, combine the ground pork, chopped shrimp, green onions, soy sauce, oyster sauce, sesame oil, grated ginger, minced garlic, and ground white pepper. Mix well until all the ingredients are evenly incorporated.
- To make the wontons, place a small spoonful of the filling in the center of a wonton wrapper. Moisten the edges of the wrapper with water, then fold it diagonally to form a triangle. Press the edges firmly to seal. Bring the two outer corners of the triangle together and press to seal, forming a little pouch. Repeat with the remaining filling and wrappers.
- In a large pot, bring the chicken broth to a boil. Add the minced garlic, sliced ginger, soy sauce, sesame oil, and salt. Reduce the heat and let the broth simmer for about 10-15 minutes to allow the flavors to meld together. Remove and discard the ginger slices before serving.
- While the broth simmers, bring a separate pot of water to a boil. Cook the fresh egg noodles or wonton noodles according to the package instructions. Drain and rinse with cold water to prevent them from sticking.
- In a separate pot, bring water to a boil and blanch the bok choy or baby bok choy for a minute or two until crisp-tender. Drain and set aside.
- Bring the broth back to a simmer. Gently add the wontons to the simmering broth and cook for about 4-5 minutes or until the wontons float to the surface and are cooked through.
- To serve, divide the cooked noodles among bowls. Place a few blanched bok choy leaves on top of the noodles. Use a slotted spoon to remove the cooked wontons from the broth and place them in the bowls.
- Ladle the hot broth over the noodles and wontons. Garnish with chopped green onions, sliced red chili pepper (if desired), and cilantro leaves.
